Ummm, well, what kind of essay does it have to be?? Descriptive? It sounds like that would be it because of all the adjectives you listed :) Do you have a word limit or anything?? If I knew some of these things I would be glad to help :)

if this your undergraduate admission essay,I would highly suggest you to make it more descriptive. Make it as an Essay. Write on why do you feel, he/she is special to you. If you say she is kind, then is their something she had done for you or anyone else around you?
