Undergraduate / Human nutrition as my major, UIUC essay [NEW]

Please help me with my grammar and please give me some suggestions for improvement .
I was born in Chicago but was raised and educated in Taiwan before I came to the USA for college education. Thus, I have a very different background which makes me a person with wider and diverse perspectives on things. Not to mention that I am bilingual and culturally sensitive in terms of knowledge and relationship. I am very interested in pursuing a bachelor degree in human nutrition not only because I have strong interests on subjects related to biology and human sciences, but also because of my father's newly found condition, diabetes.
My father was diagnosed as diabetes in the past April according to thorough exam and check up by an internist. This is not terrifying news for us since we already know that my dad has the gene of DM running in his family. What bother us the most is the way to stay healthy and in control. Among these changes to be made, knowing and choosing what to eat is the biggest challenge for my dad. He tried many ways to stay away from the food which will cause the increase of blood sugar. Sometimes he was in great hunger state, but the glucose level remained high, and he was so frustrated and felt hopeless.
While I am away from home and study in America, my heart is with my dad that I hope to be able to help him. I believe I am well prepared to take the next step in the pursuit of my dream by acquiring a human nutrition degree in UIUC. I know the tasks ahead of me will not be easy, but I am confident that I have what it takes to make my dream come true.
