Since i'm switching major from art to education. i don't know how to start my essay!
This is the question they want me to answer.
"A statement of purpose of approximately 500 words describing your objectives in undertaking graduate study. In reviewing applications, considerable importance is placed on the applicant's interest in and commitment to advanced study and professional development."
I would start with why you were an art major and why you are switching to education. Are you switching to Art Ed? If so, explain how that best fits you and your "purpose" in life. This will be a semi-short essay, but you can fill it with tons of information to captivate the board.

Why not focus on what you can do best as a general education student and yes - explain what positive things you brought from your previous classes.
