The character I would add to "Of Mice & Men" would be a female named Auburn.
She arrives in the plot after Curly's wife passes away. Auburn is a young girl from Michigan who has blonde hair, blue eyes, her skin glows, and her smile lights up any room she walks into. She is a very loving girl. Auburn's family is having a very hard time financially. In order to help her loved ones Auburn goes to work with the men. Becoming the first female to work with them. The first day on the job Auburn introduces herself to Curly, Curly looks at her and is automatically astounded by her looks.

Curly then begins to fall really hard for Auburn because of her laugh, smile, eyes, voice,
and literally everything about her. Curly goes to the guys to ask them what they think of
Auburn. Slims response "Isn't it a little soon Curly? I mean, your wife just died." Curly responds
with a loud sigh and says "I know, but I need to move on eventually its been nearly a year since
she's been gone. She wouldn't want me to be sad and lonely all of the time." Slim agrees and tells
Curly he should ask Auburn on a date. Slim and Curly end the conversation at that.
Curly listens to Slims recommendation and approaches Auburn the next day which happens to be
a week after they met one another. He says "Your looking mighty fine today would you be
interested in having dinner at my house tonight?" Auburn blushes and replies "of course."
Later that night Curly cooks Auburn a fancy dinner. Auburn and Curly really begin to like
each other. After dinner Curly asks Auburn if she'd be his girlfriend. Auburn undoubtedly says
"Absolutely, I'd be honored." Six months later they find out Auburn is pregnant. Curly is surprisingly
very happy and excited about the whole situation. Auburn has never wanted to have a child
before marriage. Due to that, five and a half months into Auburn's pregnancy Curly proposes to
Auburn. Auburn again without a doubt says yes. Curly and Auburn move back to Michigan to help her
family out and be with her loved ones. They would like to raise their child around her family.
Two months later Auburn and Curly end up getting married, all of the guys from work attend
Curly and Auburn's wedding. They live happily ever after.

Its very, hate to say it, boring. Its a short story but dont be afraid to add some drama, intrigue, some sort of challenge/excitement . Every good story needs rising action, climax, and falling action. Maybe mention Auburn's opposing love interest, whatshisname. Or lead up to the wedding, reveal the pregnancy, provide suspense over whether the wedding will continue, and then you can have falling action and happily ever afters.
